First invented by Benedictine monks at the abbey in Saint-Hilarie near Carcassonne in 1531. Contrary to popular belief it was not first discovered by Dom Pérignon although he made lots of adjustments for it to evolve into the drink we know today. The French originally did not want bubbles in their wine and made efforts to try to stop this from happening. It was the developing popularity in the 19th century among British royals and nobility and it was during this period that many of the famous champagne houses were founded including Pommery (1858), Krug (1843) and Bollinger (1829).

Champagne has had a long history of being used in celebration of events such as the launching of ships.Some brands produce magnums and jeroboams that can sell for in excess of £30,000. In 2010 divers discovered various bottles of champagne in a shipwreck off the coast of Finland. A 200-year-old bottle of champagne Veuve Clicquot which was found later sold at auction for £26,700.
